Quick Pumpkin Cookies
1 box of spice cake mix
15 oz of canned pumpkin (or 1/2 of a 29 oz. can)
1 whole egg (or 1 egg white for lower fat)
1 tsp. of pumpkin pie spice or 1/2 tsp.
cinnamon, 1/4 tsp. cloves, nutmeg & ginger.
Stir together till completely moistened
add 1 to 2 cups of chocolate chips
Optional: chopped walnuts or pecans
Place by spoonfuls on greased cookie sheet
Bake at 350 degrees for about 12 minutes
yield: about 3 dozen
Can be baked in muffin tins, baking time will be longer.
